Garlic Almond Basil Pesto Pizza...

Serves: 4-6
Ingredients:
   1 GF/ WF pizza base
(I know what you are thinking where do I find this?? you can find these in your local supermarket)
   4-5 garlic cloves, peeled
   4 1/2 tbsp. extra virgin olive oil
   1/2 tsp. salt
   2- 3 tbsp. Almond Basil Pesto
Method:
  1. Preheat your oven to 180°C. Warm a mortar by running hot water over it until it feels warm to the touch. Dry the mortar with a paper towel.
  2. Place the peeled garlic and salt in the mortar. Using the pestle, smash the garlic with the salt until it forms a smooth paste. Add 3 tbsp. oil in a thin and gradual stream. Continue to stir the mixture with the pestle while adding the oil. The mix should be smooth and fairly thick. Taste the mix, and add more salt if needed. Set aside.
  3. In a small bowl/ container mix olive oil and pesto, if you need to add more olive oil to get a nice (slightly runny) consistency, do so.  Set aside.
  4. Spoon garlic mix onto pizza base, as much as you want, spreading it around with the back of the spoon. Spoon almond basil pesto onto the pizza base, you can do design like I did if you like.
    Move pizza base onto a large oven tray, and cook for 15- 20 minutes or until the base starts to bubble up and picks up some colour.
    Serve.
